Creative Cookin on the Ranch

The cowboy’s and cowgirl’s were busy working cattle all weekend, so I decided to make a fun light dessert for them to enjoy after they were done working. We cook the majority of our summer meals on the Traegers. This recipe is a must try if you have a grill/smoker. Please check out my recipe and feel free to post other fun grill/smoker dessert recipes.


Of course these guys are a little offended by the name of this cake but I know if they get the chance they'd like to pig out on this cake.


Traeger or Smoker Pig Pickin’ Cake


1 box yellow cake mix

1 15oz can mandarin oranges

4 eggs

1/2 cup water

1/4 cup veggie oil

1 tsp vanilla

1 stick of butter


Frosting


1 tub cool whip

3/4 cup confectioners’ sugar

1/2 tsp of vanilla


1. Turn on your Traeger or smoker temperature to approximately 300-350 degrees.


2. Combine the yellow cake mix, eggs (mix in one egg at a time), oil, butter, 1/2 cup of mandarin orange juice, vanilla, and water (add more if the batter consistently is to thick). Use hand mixer for approximately 3 minutes.


3. Combine cake mixture with a 1/2 can of mandarin oranges (lightly mix by hand) until mixed.


4. Pour cake into 9x13 pan greased pan. I use butter to grease my pan.


5. Place cake in Traeger or smoker. I put

my cakes on the top rack approximately 4 inches from the grill top.


6. Set your timer to check the cake every 10 minutes and adjust the temperature as necessary. I sometimes bring my temperature down to 300 if I see the edges browning. The cake should be done within approximately 15-25 minutes.


7. After the cake is completely cooled combine cool whip, confectioners’ sugar and vanilla into a small bowel and mix. After the frosting is applied top the cake top with the additional mandarin oranges.
